I don't know how many of you have ever sat down and realized how many foods have carbohydrates, but it is a lot! Since this blog doubles as my weekly journal entry I figured I had to mention that Mark and I are on a weight loss plan that includes as little carbs as possible (now this doesn't mean we can't have any, just not any food that is mostly sugar or has more than a couple grams of carbs per serving). I am going on week 2 and haven't seen any results but we are going to the beach in just over a month, and that thought keeps me going.
The food I have missed the most is:
Pasta, Bread, candy (starbusts and skittles the most), Pineapple (I didn't eat it until the last 2 years and now I love it), pasta, cookies, bread, strawberries, crackers, bread, candy, ice cream, cookies, mashed potatos, candy, milk, strawberries, orange juice (the freshman girls should understand why I miss that), bread, yogut, cookies, pasta, popcorn, rice, and candy.
Yup that's most of it ;-). However the cravings are getting less and less every day, particularly rice, soda, OJ, and pasta.
The things I have enjoyed the most:
Tucanos last Friday, hamburgers, string cheese (well cheese of any variety, stringy or not) SlimJims, raw broccoli, peanutbutter, steak, eggs, salad, pepperoni, Diet Dr. Pepper, sugar free juice, and bacon.
I have always LOVED cheese, so if this was a no dairy diet I know I couldn't do it. Mark has me convinced that by the end of this week I will have lost some pound-age, I hope that is true!
This diet has made me much more knowledgable about what is in food. I look at labels ALL the time now! I have finally learned how to not over cook bacon, and the most recent cooking enlightenment is how to make Deviled Eggs. I saw a Rachel Ray show on lots of different kinds of deviled eggs, so yesterday for family home evening Mark and I made Bacon Deviled Eggs. I had never had deviled eggs before...they are amazing! As of now (1 hr after school) I have 1 of my 9 eggs left :-).
Today during school I noticed that I had a message on my phone, but being the oh so responsible teacher I am I did not check my message until after school was out. The message was from a principal! Finally some more response from NC, this school however has only 60% of students on grade level. I am doing my reading levels now and already have 50% of my kids ABOVE grade level in reading, its crazy! I may just be getting "unique" schools contacting me, but please will some of you southerners tell me most schools in NC aren't this "different"!

I will miss you when you are gone my friend! Getting healthy is so worth it. I have not been as strict as you have been on food but just not buying chips or candy or junk food is hard but I can tell that I just feel better, ya know?
We've had a totally different experience with schools in NC. In fact, we think they are too tough and focus too much on reading. Kindergartners here are reading and writing 3 sentences by Christmas. Several kids in C's class are reading THREE grades above their grade. But I guess it varies by the school.
As far as the food...calories count too! A lot of the stuff you mentioned has lots of calories. The Weight Watchers system really worked for me, even though previously I said I would NEVER sign up. Now I'm a firm believer. They focus mostly on the calories, fat, and fiber in food.

congrats on being healthy! Megan is so right - it feels so good to be good to your body! (i'm not the best at it, but on the days it happens, it's amazing!) keep it up girl! You two inspire me!
